TRADITIONAL GERMAN GOULASH RECIPE
Ingredients:
- 2 lbs (about 900g) beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 2 large onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 1 teaspoon marjoram
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 large potatoes, peeled and cubed
- 2 carrots, peeled and sliced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 tablespoons all-purpose flour
- Chopped fresh parsley, for garnish
Instructions:
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and brown them on all sides. You may need to do this in batches to avoid overcrowding the pot. Once browned, remove the beef from the pot and set it aside.
- In the same pot, add the chopped onions and garlic. Cook until the onions are soft and translucent, about 5 minutes.
- Stir in the tomato paste, paprika, caraway seeds, marjoram, thyme, salt, and black pepper. Cook for another 2 minutes, stirring constantly to coat the onions and garlic with the spices.
- Return the browned beef cubes to the pot. Pour in the beef broth and red wine (if using), and stir to combine. Bring the mixture to a simmer.
- Reduce the heat to low, cover the pot, and let the goulash simmer gently for 1.5 to 2 hours, or until the beef is tender.
- After the beef has cooked for about 1 hour, add the cubed potatoes, sliced carrots, and chopped bell peppers to the pot. Stir well, cover, and continue to simmer until the vegetables are tender and the flavors have melded together.
